Ingredients:
- 5 cups low sodium chicken broth
- 1 can (796 ml) diced tomatoes
- 1 medium onion, chopped
- 4 cloves garlic, chopped
- 2 tsp chili powder
- 2 tsp cumin
- 1 tsp paprika
- 1 tsp coriander
- 3 boneless, skinless chicken breasts
- 1 can (540) black beans, drained and rinsed
- 2 cups frozen corn kernels
- Toppings, such as cilantro, cheese, tortilla chips, avocado...
Preparation:
- Combine all ingredients in slow cooker
- Cook on low for 7 - 8 hours
- Remove chicken, shred and return to pot
- Serve with desired toppings
