Ingredients:

  • 5 cups low sodium chicken broth
  • 1 can (796 ml) diced tomatoes
  • 1 medium onion, chopped
  • 4 cloves garlic, chopped
  • 2 tsp chili powder
  • 2 tsp cumin
  • 1 tsp paprika
  • 1 tsp coriander
  • 3 boneless, skinless chicken breasts
  • 1 can (540) black beans, drained and rinsed
  • 2 cups frozen corn kernels
  • Toppings, such as cilantro, cheese, tortilla chips, avocado...

Preparation:

  1. Combine all ingredients in slow cooker
  2. Cook on low for 7 - 8 hours
  3. Remove chicken, shred and return to pot
  4. Serve with desired toppings
