Beef & Barley Soup
- 1c diced celery
- 1c diced yellow onion
- 2c sliced carrots
- 4c cooked roast beef
- 1c sliced mushrooms
- 2c pearl barley
- 8c beef broth
- 2 cloves minced garlic
- 1tbsp steak spice
Directions
Bring all ingredients to a boil until carrots are for tender, approximately 10-15 minutes. Add salt and pepper if desired.
Option:
- If you have raw beef:
In stock pot:
- Cube in 1" squares. Coat in cornstarch and brown on all sides in vegetable oil.
- Cover with broth and simmer on medium for approximately 1 hour. Check often to ensure it is not boiling dry,
- Continue with the remaining ingredients.
