Beef & Barley Soup

  • 1c diced celery
  • 1c diced yellow onion
  • 2c sliced carrots
  • 4c cooked roast beef
  • 1c sliced mushrooms
  • 2c pearl barley
  • 8c beef broth
  • 2 cloves minced garlic
  • 1tbsp steak spice

Directions

Bring all ingredients to a boil until carrots are for tender, approximately 10-15 minutes. Add salt and pepper if desired.

Option:

  • If you have raw beef:

In stock pot:

  • Cube in 1" squares. Coat in cornstarch and brown on all sides in vegetable oil.
  • Cover with broth and simmer on medium for approximately 1 hour. Check often to ensure it is not boiling dry,
  • Continue with the remaining ingredients.
