Apricot Glazed BBQ Pork Chops
Serves 4
Ingredients:
- 4 Pork Chops (½ inch 1 ¼ cm thick)
- Salt & Pepper
- ¼ cup Apricot Preserve
- 2 tbsp White Wine Vinegar
- ¼ tsp fresh chopped or dried Thyme
Directions:
- Heat your grill to 400°f.
- In a small mixing bowl, combine the apricot preserve, white wine vinegar, and thyme. Depending on the consistency of the preserve, you may need to add water to achieve a glaze consistency.
- Season the pork chops generously with salt and pepper and put on the grill.
- Cook the pork for two minutes, rotate 45° and cook for one more minute.
- Flip the pork, brush with the glaze and cook for two minutes. Rotate the pork 45° and cook for one more minute.
- Flip the pork, glaze, and cook for one minute. Flip one last time. Cook for one minute and chef doneness. The internal temperature of the pork should be a minimum of 145°f.
- Allow the pork to rest for five minutes and serve.
Grilled Vegetables
Ingredients:
- 12 sprigs of asparagus, bottom quarter removed
- 1 med. Zucchini cut into quarters length-wise
- 1 red bell pepper, cut in quarters with the seeds and stems removed
- 2 tbsp olive oil
- Salt and pepper
Directions:
- Spread the vegetables out onto a pan and drizzle with olive oil. Season with salt and pepper.
- Grill the vegetable on high heat for three to four minutes per side.
- Remove the vegetables from the grill and serve immediately.
