HALIFAX, N.S. -- Ingredients:

  • 2 slices of bacon, diced
  • ½ cup diced onion
  • 2 cloves of garlic, sliced
  • 1 cup fresh corn kernels
  • 1 jalapeno, seeds removed, minced
  • ½ cup quartered cherry tomatoes
  • 1 cup green beans cut into 2 cm pieces
  • 1-2 tbsp cider vinegar
  • 2 tbsp fresh herbs, chopped
  • Salt and pepper to taste

Directions:

  1. Heat a medium-sized frying pan over medium heat. Add the bacon and cook it until it is brown.
  2. Drain off all but 1 tbsp of the bacon fat and add the onions into the pan. Cook the onions for 2 to 3 minutes.
  3. Add the garlic and jalapeno into the pan and cook for one more minute.
  4. Next, put the corn, and green beans into the pan. Cook the mixture for 5 to 6 minutes or until the corn and beans are tender.
  5. Finish the succotash with the cider vinegar, herbs, salt and pepper to taste.
  6. Serve as a side dish with pork chops, barbecue chicken, or eat it by itself.
