HALIFAX, N.S. -- Ingredients:
- 2 slices of bacon, diced
- ½ cup diced onion
- 2 cloves of garlic, sliced
- 1 cup fresh corn kernels
- 1 jalapeno, seeds removed, minced
- ½ cup quartered cherry tomatoes
- 1 cup green beans cut into 2 cm pieces
- 1-2 tbsp cider vinegar
- 2 tbsp fresh herbs, chopped
- Salt and pepper to taste
Directions:
- Heat a medium-sized frying pan over medium heat. Add the bacon and cook it until it is brown.
- Drain off all but 1 tbsp of the bacon fat and add the onions into the pan. Cook the onions for 2 to 3 minutes.
- Add the garlic and jalapeno into the pan and cook for one more minute.
- Next, put the corn, and green beans into the pan. Cook the mixture for 5 to 6 minutes or until the corn and beans are tender.
- Finish the succotash with the cider vinegar, herbs, salt and pepper to taste.
- Serve as a side dish with pork chops, barbecue chicken, or eat it by itself.
