Ingredients:

  • 1 cup spinach
  • 2/3 cup oats
  • 1 cup unsweetened applesauce
  • 1/4 cup coconut oil
  • 1/4 cup honey
  • 1 teaspoon vanilla
  • 1/3 cup cocoa powder
  • 2 tablespoons chia seeds
  • 1/2 teaspoon baking powder
  • 1/4 cup mini chocolate chips

Directions:

  1. Preheat the oven to 350 F. Line an 8×8-inch pan with parchment paper.
  2. Add all the ingredients except the chocolate chips to a blender. Blend until smooth.
  3. Pour into prepared pan and top with chocolate chips.
  4. Bake for 25 minutes, or until firm to the touch.
  5. Let cool for about 10 minutes. Place into the fridge and allow to cool completely in the pan. Cut when cool. These brownies are best reheated.
