Ingredients:
- 1 cup spinach
- 2/3 cup oats
- 1 cup unsweetened applesauce
- 1/4 cup coconut oil
- 1/4 cup honey
- 1 teaspoon vanilla
- 1/3 cup cocoa powder
- 2 tablespoons chia seeds
- 1/2 teaspoon baking powder
- 1/4 cup mini chocolate chips
Directions:
- Preheat the oven to 350 F. Line an 8×8-inch pan with parchment paper.
- Add all the ingredients except the chocolate chips to a blender. Blend until smooth.
- Pour into prepared pan and top with chocolate chips.
- Bake for 25 minutes, or until firm to the touch.
- Let cool for about 10 minutes. Place into the fridge and allow to cool completely in the pan. Cut when cool. These brownies are best reheated.
