Fish Tacos with Spicy Mayo Recipe
Makes 6-8
Crispy Beer Battered Fish Ingredients:
- 2 lbs. of fresh haddock cut in 1 inch strips
- Oil for frying (heated to 360F)
- 1 cup all-purpose flour
- 1/2 cup rice flour
- 1/4 cup cornstarch
- 1/2 tbsp baking powder
- 1/2 tbsp baking soda
- 1 tbsp Cajun seasoning (we used Hot Under The Kilt Acadian Cajun seasoning)
- 2 1/2 cups beer
Directions:
- Combine the flour, rice flour, cornstarch, baking powder, baking soda, and Cajun seasoning.
- Stir in the beer.
- Dip the fish into the batter letting any excess drip off.
- Place the fish in the oil, swirling it slightly through the oil to prevent it from sticking to the bottom and then gently dropping in.
- Once golden brown, remove the fish to a plate lined with a paper towel to absorb excess oil.
Taco Ingredients:
- Flour tortilla, 6 inch
- 6-8 leaves of spinach
- 2 pc of fried fish
- 1 tbsp red onions, sliced
- 1 tbsp cucumber, diced
- 1 tbsp tomatoes, diced
- 1 tbsp marble cheese, shredded
- 1 tbsp spicy mayo (recipe below)
- Sprig of cilantro
- Squeeze of lime
Directions:
- Top your tortilla with spinach, followed by two pieces of the fish.
- Add tomatoes, cucumber, red onions.
- Top with spicy mayo and cilantro, follow with a squeeze of fresh lime juice.
Spicy Mayo Ingredients:
- 3/4 cup mayonnaise
- 1 1/2 tsp hot sauce of your choice
- 1 tbsp Cajun seasoning
- 1 tsp fresh lime juice
Directions:
- Combine and refrigerate.
