Ingredients:
- 1/3 cup extra virgin olive oil
- 2/3 cup evaporated milk (we used Dairy Isle evaporated milk)
- 1/2 cup old cheddar cheese (we used Dairy lsle old cheddar cheese)
- One large egg
- 1 ½ cups tapioca flour
- 1 tsp sea salt
Directions:
- Preheat oven to 400°F.
- Grease a 24-well mini muffin tin with butter.
- In a blender, incorporate the olive oil, egg, cheese, tapioca flour and salt.
- Pulse until smooth. You may need to use a spatula to scrape down the sides of the blender so that everything is well blended.
- Pour batter into prepared mini-muffin tin, not quite to the top; leave about 1/8 inch from the top.
- Bake 15-20 minutes, until puffy and nicely browned.
- Remove from oven and let cool on a rack for a few minutes.
- Eat right out of the oven. Perfect accompaniment for soup, salad, chili, or use as a base for canapés.
