Ingredients:

  • 1/3 cup extra virgin olive oil
  • 2/3 cup evaporated milk (we used Dairy Isle evaporated milk)
  • 1/2 cup old cheddar cheese (we used Dairy lsle old cheddar cheese)
  • One large egg
  • 1 ½ cups tapioca flour
  • 1 tsp sea salt

Directions:

  1. Preheat oven to 400°F.
  2. Grease a 24-well mini muffin tin with butter.
  3. In a blender, incorporate the olive oil, egg, cheese, tapioca flour and salt.
  4. Pulse until smooth. You may need to use a spatula to scrape down the sides of the blender so that everything is well blended.
  5. Pour batter into prepared mini-muffin tin, not quite to the top; leave about 1/8 inch from the top.
  6. Bake 15-20 minutes, until puffy and nicely browned.
  7. Remove from oven and let cool on a rack for a few minutes.
  8. Eat right out of the oven. Perfect accompaniment for soup, salad, chili, or use as a base for canapés.
