Loaded Potato Soup Recipe

Serves 4

Ingredients:

  • 8 slices smoked bacon
  • 1 tbsp butter
  • 1 medium onion, diced
  • 3 green onions, sliced
  • 1 stalk celery, diced
  • 1 tbsp dry oregano
  • 3 cups potato, peeled and chunked
  • 2 cups chicken broth
  • 1 can evaporated milk
  • 1 cup shredded cheddar cheese, plus a bit for garnish
  • 1 tbsp fresh parsley
  • Salt and pepper to taste

Directions:

  1. Pre-heat oven to 400F.
  2. Cook four slices of the bacon in the oven for 15 to 20 minutes or until crispy, then set aside to use for garnish.
  3. In a medium size pot, boil the potatoes until fork tender.
  4. Place potatoes in a blender and purée along with some of the potato water and set aside.
  5. Dice the rest of the bacon and place the bacon and butter into a heavy bottomed soup pot. Sauté for few minutes, then add the onion, green onions, and celery and cook until translucent. Add oregano, salt and pepper and deglaze with chicken broth.
  6. Bring to a boil and then add pureed potatoes.
  7. Slowly add the evaporated milk and cheddar cheese.
  8. Simmer for few minutes until nice and hot.
  9. Finish with parsley and add salt and pepper as needed.
  10. Garnish the soup with crispy bacon, shredded cheddar cheese and green onions.
