Mediterranean Pizza

Ingredients:

  • 5 cups 00 flour, plus some for dusting
  • 1 ½ tsp active dry yeast
  • 1 ½ tsp sea salt or Himalayan salt
  • 2 ¼ cups cold water
  • 1-2 tablespoons of extra virgin olive oil (we used Simply For Life extra virgin olive oil)

Directions:

  1. In the bowl of your electric mixer, mix/combine the flour, sea salt and active dry yeast on low speed until all is incorporated. Then add the cold water.
  2. Attach the dough hook and mix together on low speed for 8 to 10 minutes. The dough should be smooth and sticky, but not stick to the sides of the bowl, only a little to the bottom. (If the dough sticks to the sides sprinkle in a little more flour. If it is too dry, add a bit more water).
  3. After the 8 minutes have passed remove the dough from mixer (recommend putting oil on your hands to handle).
  4. Roll the dough a bit with a sprinkle of flour.
  5. Oil the bottom of a glass or ceramic bowl and place the ball of dough in the bowl. Drizzle olive oil on top and spread it over.
  6. Cover with plastic wrap, then a tea towel and allow to sit at room temperature and rise for 2 hours in a draft free area.
  7. Divide the dough into equal parts.
  8. Dust a board with the flour and roll each ball of dough into roughly a 6-inch round.
  9. Heat the oil (fill about 1/2 to 3/4 inch worth on the bottom of your pan) in a medium skillet, set over medium heat, about 3 minutes to get it hot.
  10. Add one of the dough rounds to the hot pan.
  11. When the dough begins to bubble on the top and the bottom is golden brown, flip to cook the other side, 2 minutes per side.
  12. Remove the crust from the pan to a plate and add your favorite toppings, like arugula, cherry tomatoes, Bocconcini cheese, balsamic vinegar, olive oil, caramelized onions, and prosciutto.
