Mediterranean Pizza
Ingredients:
- 5 cups 00 flour, plus some for dusting
- 1 ½ tsp active dry yeast
- 1 ½ tsp sea salt or Himalayan salt
- 2 ¼ cups cold water
- 1-2 tablespoons of extra virgin olive oil (we used Simply For Life extra virgin olive oil)
Directions:
- In the bowl of your electric mixer, mix/combine the flour, sea salt and active dry yeast on low speed until all is incorporated. Then add the cold water.
- Attach the dough hook and mix together on low speed for 8 to 10 minutes. The dough should be smooth and sticky, but not stick to the sides of the bowl, only a little to the bottom. (If the dough sticks to the sides sprinkle in a little more flour. If it is too dry, add a bit more water).
- After the 8 minutes have passed remove the dough from mixer (recommend putting oil on your hands to handle).
- Roll the dough a bit with a sprinkle of flour.
- Oil the bottom of a glass or ceramic bowl and place the ball of dough in the bowl. Drizzle olive oil on top and spread it over.
- Cover with plastic wrap, then a tea towel and allow to sit at room temperature and rise for 2 hours in a draft free area.
- Divide the dough into equal parts.
- Dust a board with the flour and roll each ball of dough into roughly a 6-inch round.
- Heat the oil (fill about 1/2 to 3/4 inch worth on the bottom of your pan) in a medium skillet, set over medium heat, about 3 minutes to get it hot.
- Add one of the dough rounds to the hot pan.
- When the dough begins to bubble on the top and the bottom is golden brown, flip to cook the other side, 2 minutes per side.
- Remove the crust from the pan to a plate and add your favorite toppings, like arugula, cherry tomatoes, Bocconcini cheese, balsamic vinegar, olive oil, caramelized onions, and prosciutto.
