Makes 2

Ingredients:

  • 4 slices bread
  • 1/4 cup chunky peanut butter
  • 1/4 cup molasses
  • 6 slices bacon
  • 2 oz Monterey jack cheese grated
  • 2 oz butter

Directions:

  1. Combine the peanut butter and molasses in a bowl an mix well.
  2. Divide between 2 slices of bread.
  3. Top each sandwich with half the bacon and half of the cheese.
  4. Top with the second slice of bread. Butter the top side.
  5. Heat a skillet over medium high heat and place the sandwich in the pan butter side down.
  6. Butter the top side. Cook until the bottom is golden brown. Flip and cook the other side.

Tomato, Basil, Parmesan Soup w/ Grilled Cheese Croutons

Ingredients:

  • 4 sticks of celery
  • 4 medium carrots peeled
  • 2 medium onions
  • 3 cloves of garlic
  • 2 cups of cherry tomatoes
  • 1 handful of fresh basil
  • A few sprigs of fresh oregano
  • A few sprigs of fresh parsley
  • 1/4 cup butter
  • 1 tbsp dried basil
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 4 cups of chicken broth
  • 1 28 oz can of fire roasted tomatoes
  • 1 cup of heavy cream
  • 1 cup of coffee cream
  • 1 cup of grated parmesan

Directions:

  1. Place the celery, carrots, onion and garlic into a food processor and pulse until fine.
  2. Transfer to a bowl and set aside.
  3. Pulse the cherry tomatoes and fresh herbs until smooth.
  4. Melt the butter in a heavy bottom pot.
  5. Add the vegetables and sauté for 3 to 4 minutes.
  6. Add the pureed vegetables and continue to sauté for another 2 to 3 minutes.
  7. Add the dried basil and the salt and pepper.
  8. Add the fire roasted tomatoes and the chicken broth.
  9. Bring to a boil reduce and simmer for 15 minutes.
  10. Finish with the heavy cream, coffee cream and parmesan cheese.
