Serves 2-4

Ingredients:

  • One large head of cauliflower (core removed)
  • 1/4 cup of butter
  • 1/4 cup of flour
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp white pepper
  • 2 cups of whole milk
  • 1 1/2 cups medium cheddar (we used Dairy Isle medium cheddar)
  • 1 1/2 cups sharp cheddar (we used Dairy Isle sharp cheddar)
  • 2 tsps hot sauce
  • 4 tsps Asian chili sauce
  • 1 tsp Dijon
  • 1 tsp Worcestershire sauce
  • 1 jar pimento peppers

Directions:

  1. Place the whole head of cauliflower in a microwave safe dish.
  2. Add a quarter cup of water cover with Saran wrap and microwave for 10-12 minutes on high
  3. Melt the butter and a heavy bottom saucepan.
  4. Stir in the flour and continue to stir continuously until the flour begins to turn golden brown and takes on a nutty smell.
  5. Add all of the seasonings continuing to stir.
  6. Add the milk and stir until the sauce begins to thicken.
  7. Add the cheese and continue to stir until the cheese has melted.
  8. Stir in the hot sauce, Dijon, Worcestershire sauce, Asian chili sauce, and the pimentos. Continue to stir until heated through
  9. Place the soft head of cauliflower into a baking dish. Pour the cheese over top. Put into a 350° oven for 10 minutes.
