Serves 2-4
Ingredients:
- One large head of cauliflower (core removed)
- 1/4 cup of butter
- 1/4 cup of flour
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp white pepper
- 2 cups of whole milk
- 1 1/2 cups medium cheddar (we used Dairy Isle medium cheddar)
- 1 1/2 cups sharp cheddar (we used Dairy Isle sharp cheddar)
- 2 tsps hot sauce
- 4 tsps Asian chili sauce
- 1 tsp Dijon
- 1 tsp Worcestershire sauce
- 1 jar pimento peppers
Directions:
- Place the whole head of cauliflower in a microwave safe dish.
- Add a quarter cup of water cover with Saran wrap and microwave for 10-12 minutes on high
- Melt the butter and a heavy bottom saucepan.
- Stir in the flour and continue to stir continuously until the flour begins to turn golden brown and takes on a nutty smell.
- Add all of the seasonings continuing to stir.
- Add the milk and stir until the sauce begins to thicken.
- Add the cheese and continue to stir until the cheese has melted.
- Stir in the hot sauce, Dijon, Worcestershire sauce, Asian chili sauce, and the pimentos. Continue to stir until heated through
- Place the soft head of cauliflower into a baking dish. Pour the cheese over top. Put into a 350° oven for 10 minutes.
