Ingredients:

  • 1 clove of garlic, finely diced
  • Salt and pepper
  • ½ cup honey
  • ½ cup lemon juice, freshly squeezed
  • Zest of half lemon
  • Juice of 1 lime
  • ¾ cup canola oil
  • 1 cup fresh raspberries
  • 1 tbsp Dijon mustard
  • 1 tbsp chives finely chopped

Directions:

  1. Combine the dressing ingredients in a blender and blend until they emulsify. Refrigerate for one hour prior to serving.
  2. The vinaigrette will keep for 10 to 14 days in the refrigerator.
  3. Combine your favorite greens with a selection of fresh fruits, tomatoes, capers, red onions and red peppercorns.
  4. Add candied salmon (we used candied salmon from True North Seafood) and drizzle salad with vinaigrette.
