Ingredients:
- 2 chicken breasts
- Salt and pepper
- 1 tbsp butter
- 1 tbsp olive oil
- 1 jar Galloping Cows’ cranberry pepper spread
Directions:
- Preheat oven to 350°
- Season the chicken breasts with salt and pepper.
- Place the olive oil and butter into a cast iron skillet or an oven safe pan.
- Place the chicken breast in the pan and sear until golden brown. Turn and cook on the other side.
- Top each chicken breast with 1/2 of the jar of Galloping Cows’ cranberry pepper spread. Place in the oven and bake for 20 minutes.
Cranberry Pepper Glaze on Roasted Vegetables
Serves 2
Ingredients:
- 6 baby carrots, cut lengthwise
- 12 Brussels sprouts, cut in half
- 1/2 butternut squash, cut in cubes
- 2 tablespoons of olive oil
- One jar of Galloping Cows’ cranberry pepper spread
- 1 tsp salt
- 1/2 tsp pepper
Directions:
- Place the vegetables in a bowl and toss with the olive oil, Galloping Cows’ cranberry pepper spread, and salt and pepper.
- Spread on a parchment lined baking sheet and place in a 400° oven.
- Roast for 30 minutes or until the vegetables are golden brown.
