Serves 2

Ingredients:

  • 2 chicken breasts
  • Salt and pepper
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1 jar Galloping Cows’ cranberry pepper spread

Directions:

  1. Preheat oven to 350°
  2. Season the chicken breasts with salt and pepper.
  3. Place the olive oil and butter into a cast iron skillet or an oven safe pan.
  4. Place the chicken breast in the pan and sear until golden brown. Turn and cook on the other side.
  5. Top each chicken breast with 1/2 of the jar of Galloping Cows’ cranberry pepper spread. Place in the oven and bake for 20 minutes.

Cranberry Pepper Glaze on Roasted Vegetables

Serves 2

Ingredients:

  • 6 baby carrots, cut lengthwise
  • 12 Brussels sprouts, cut in half
  • 1/2 butternut squash, cut in cubes
  • 2 tablespoons of olive oil
  • One jar of Galloping Cows’ cranberry pepper spread
  • 1 tsp salt
  • 1/2 tsp pepper

Directions:

  1. Place the vegetables in a bowl and toss with the olive oil, Galloping Cows’ cranberry pepper spread, and salt and pepper.
  2. Spread on a parchment lined baking sheet and place in a 400° oven.
  3. Roast for 30 minutes or until the vegetables are golden brown.
