Serves 2

Ingredients:

  • 12 oysters, shucked (we used BeauSoleil oysters)
  • 2 filet of white fish, 8oz
  • 2 tbsp canola oil
  • 2 tbsp butter
  • 2 oz oyster beer (we used BeauSoleil, an oyster stout)
  • 1 apple, julienne
  • 1 shallot, diced
  • 1 tbsp fresh dill
  • Salt and pepper to taste
  • 2 pre-cooked puff pastry, 3X3

Directions:

  1. Sear your fish in a hot skillet, with canola oil, salt, and pepper for 2 minutes on each side. Finish in a 350F oven for 10 minutes and then let rest.
  2. In separate pan melt butter, then sauté the oysters for 1 minute each side.
  3. Then sauté the apples, dill and shallots in the same butter on high.
  4. Deglaze with oyster beer.
  5. To assemble, place the bottom of the pastry on the plate. Top with the white fish, oyster, and finish with the buttery beer apple reduction and finish with top of pastry and fresh dill.
