Stuffed Pizza Pocket Recipe

Ingredients:

  • 4 medium pita
  • 4 oz pepperoni, sliced
  • 4 oz salami, sliced
  • 4 oz ham, sliced
  • 2 oz onions, diced
  • 2 oz green peppers
  • 2 oz mushrooms, sliced
  • 4 oz mozzarella
  • 4 oz pizza sauce

Directions:

  1. To soften your pita, place under a panini press for 30 second each.
  2. Cut top ½ across and open.
  3. Fill bottom half with 2 tbsp of pizza sauce, 1 oz of each meat, ¼ oz onion, green peppers and mushrooms.
  4. Finish with 1 oz mozzarella and tightly wrap from the bottom and place on panini press.
  5. Cook for 3 to 5 minutes on high.
  6. Cut in half and serve with more sauce on the side for dipping.

The Kilted Chef Pizza Sauce

Ingredients:

  • 1 28 oz can of fire-roasted tomatoes
  • 1 tbsp tomato paste
  • 3 cloves of garlic minced
  • 2 tsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 tsp dried oregano
  • 2 tsp dried basil
  • 1 tsp red pepper flakes
  • 1/2 tsp fennel
  • 1 tbsp sugar

Directions:

Place all the ingredients in a blender and whiz to combine.
