Winter Apple Vegetable Brisket Stir Fry
Ingredients:
- 8oz cooked beef brisket, diced (we used Chris Brothers’ beef brisket)
- 2 tbsp olive oil
- ½ red onion, cut in cubes
- 1 cup cubed apple skin on
- 1 lb potatoes, parboiled and cubed
- 2 cups turnips, parsnips and carrots, parboiled and chopped
- 12 leaves of basil, chopped
- 1/4 cup apple cider
- Salt and pepper to taste
Directions:
- In a bowl, toss all the vegetables and the olive oil.
- Place into a cast iron pan and grill, sauté for 5-6 minutes.
- Add the brisket and toss with the vegetables.
- When ready to turn, add the basil to the vegetables.
- Add the apple cider and bring to a boil.
- Reduce until it starts to caramelize.
- Season with salt and pepper.
- Remove from the heat, place in a bowl and serve.
