Winter Apple Vegetable Brisket Stir Fry

Ingredients:

  • 8oz cooked beef brisket, diced (we used Chris Brothers’ beef brisket)
  • 2 tbsp olive oil
  • ½ red onion, cut in cubes
  • 1 cup cubed apple skin on
  • 1 lb potatoes, parboiled and cubed
  • 2 cups turnips, parsnips and carrots, parboiled and chopped
  • 12 leaves of basil, chopped
  • 1/4 cup apple cider
  • Salt and pepper to taste

Directions:

  1. In a bowl, toss all the vegetables and the olive oil.
  2. Place into a cast iron pan and grill, sauté for 5-6 minutes.
  3. Add the brisket and toss with the vegetables.
  4. When ready to turn, add the basil to the vegetables.
  5. Add the apple cider and bring to a boil.
  6. Reduce until it starts to caramelize.
  7. Season with salt and pepper.
  8. Remove from the heat, place in a bowl and serve.
