Southern Creole Mini Potatoes with Cajun BBQ Chicken Thighs - with WP Griffin
Serves 2
Directions:
- Place the Southern Creole Mini Potatoes Cuisine in the microwave for 6 minutes.
- Let rest for 2 minutes and then carefully remove the film.
- Transfer to a bowl and add butter and the seasoning package.
Cajun Chicken Thighs Ingredients:
- 4 chicken thighs, skin on
- 2 tbsp olive oil
- 2 tbsp Cajun seasoning
Directions:
- In a medium size bowl, drizzle the chicken with olive oil and toss until well coated.
- Incorporate the Cajun seasoning and grill on your BBQ on high.
- Keep rotating on each side until the internal temperature reaches 165F.
