Goat Cheese and Haskap Berries Stuffed Chicken Breast
Serves 2
Ingredients:
- 2 boneless skinless chicken breasts
- ½ cup flour on a plate
- Egg wash - 2 eggs and 1 oz milk whisked in a bowl
- ½ cup pecans, chopped
- 2 oz of local goat cheese
- ½ cup haskap berries (we used Haskap Highland Orchards haskap berries)
- ¼ cup bacon, diced
- 2 tbsp olive oil
Directions:
- Start by pounding the two chicken breasts until they're the same thickness, using a bag or cellophane wrap and a mallet or rolling pin.
- In a small bowl, mix the haskap berries with bacon and goat cheese.
- Stuff your chicken breast with the mixture.
- Fold your chicken breasts in a similar fashion to making a wrap, fold the two ends in then roll tightly.
- Sprinkle with salt and pepper.
- Roll in flour, then egg wash and finish in the crumbled pecans.
- Place on a baking pan lined with parchment paper and drizzle with olive oil.
- Bake in oven at 400° and cook until there is an internal temperature of 165 F.
- Take out of the oven and let rest for 4 to 5 minutes and you are ready to slice.
Bacon Sauce Ingredients:
Ingredients:
- 1 cup haskap berries
- 2 tbsp butter
- 2 oz of bacon, chopped
- ¼ cup local maple syrup
Directions:
- In a medium sized pan, place the butter, diced bacon, and local maple syrup and sauté.
- Crush ½ of the haskap berries in the sauce and let it reduce for few minutes until nice and thick.
