Goat Cheese and Haskap Berries Stuffed Chicken Breast

Serves 2

Ingredients:

  • 2 boneless skinless chicken breasts
  • ½ cup flour on a plate
  • Egg wash - 2 eggs and 1 oz milk whisked in a bowl
  • ½ cup pecans, chopped
  • 2 oz of local goat cheese
  • ½ cup haskap berries (we used Haskap Highland Orchards haskap berries)
  • ¼ cup bacon, diced
  • 2 tbsp olive oil

Directions:

  1. Start by pounding the two chicken breasts until they're the same thickness, using a bag or cellophane wrap and a mallet or rolling pin.
  2. In a small bowl, mix the haskap berries with bacon and goat cheese.
  3. Stuff your chicken breast with the mixture.
  4. Fold your chicken breasts in a similar fashion to making a wrap, fold the two ends in then roll tightly.
  5. Sprinkle with salt and pepper.
  6. Roll in flour, then egg wash and finish in the crumbled pecans.
  7. Place on a baking pan lined with parchment paper and drizzle with olive oil.
  8. Bake in oven at 400° and cook until there is an internal temperature of 165 F.
  9. Take out of the oven and let rest for 4 to 5 minutes and you are ready to slice.

Bacon Sauce Ingredients:

Ingredients:

  • 1 cup haskap berries
  • 2 tbsp butter
  • 2 oz of bacon, chopped
  • ¼ cup local maple syrup

Directions:

  1. In a medium sized pan, place the butter, diced bacon, and local maple syrup and sauté.
  2. Crush ½ of the haskap berries in the sauce and let it reduce for few minutes until nice and thick.
