Irish Cider Mussels Recipe

Ingredients:

  • 1 tbsp butter
  • 1 tbsp olive oil
  • 2 tbsp minced shallot or onion
  • 1 tsp minced garlic
  • 1/4 cup diced apple
  • 1 lb mussels
  • 1/4 cup cooked, diced bacon
  • 1/2 cup strong cider
  • 1 tbsp cider vinegar

Directions:

  1. Heat a medium pot over medium-high heat.
  2. Add the olive oil and butter to the pot. Once the butter melts, add the shallot, garlic, cooked bacon, and apple. Cook for 1 minute or just until the shallot turns clear.
  3. Add the mussels to the pot and stir a few times.
  4. Add the cider and vinegar then cover the pot. Bring to a boil, and cook the mussels for 3 to 4 minutes or until they are all open.
  5. Serve the mussels with toasted Irish Brown Bread or Soda Bread.
