Makes 2
Ingredients:
- 4 slices bread
- 1/4 cup chunky peanut butter
- 1/4 cup molasses
- 6 slices bacon
- 2 oz Monterey jack cheese grated
- 2 oz butter
Directions:
- Combine the peanut butter and molasses in a bowl an mix well.
- Divide between 2 slices of bread.
- Top each sandwich with half the bacon and half of the cheese.
- Top with the second slice of bread. Butter the top side.
- Heat a skillet over medium high heat and place the sandwich in the pan butter side down.
- Butter the top side. Cook until the bottom is golden brown. Flip and cook the other side.
Tomato, Basil, Parmesan Soup w/ Grilled Cheese Croutons
Ingredients:
- 4 sticks of celery
- 4 medium carrots peeled
- 2 medium onions
- 3 cloves of garlic
- 2 cups of cherry tomatoes
- 1 handful of fresh basil
- A few sprigs of fresh oregano
- A few sprigs of fresh parsley
- 1/4 cup butter
- 1 tbsp dried basil
- 2 teaspoons salt
- 1 teaspoon pepper
- 4 cups of chicken broth
- 1 28 oz can of fire roasted tomatoes
- 1 cup of heavy cream
- 1 cup of coffee cream
- 1 cup of grated parmesan
Directions:
- Place the celery, carrots, onion and garlic into a food processor and pulse until fine.
- Transfer to a bowl and set aside.
- Pulse the cherry tomatoes and fresh herbs until smooth.
- Melt the butter in a heavy bottom pot.
- Add the vegetables and sauté for 3 to 4 minutes.
- Add the pureed vegetables and continue to sauté for another 2 to 3 minutes.
- Add the dried basil and the salt and pepper.
- Add the fire roasted tomatoes and the chicken broth.
- Bring to a boil reduce and simmer for 15 minutes.
- Finish with the heavy cream, coffee cream and parmesan cheese.
