Ingredients:

  • 2 tsp of sesame oil
  • 1/4 of a red onion, finely diced
  • 1/2 of a large carrot, finely diced
  • ¼ cup peppers, finely diced
  • ½ cup salt pork, cooked and diced
  • 8 oz cold water shrimps
  • 1 egg, slightly beaten
  • 1 tsp fresh dill
  • Salt and pepper to taste
  • 1 cup frozen peas
  • 2 cups long-grain rice cooked
  • 1 tbsp fresh lime juice
  • 1/4 cup soya sauce
  • 2 green onions chopped

Directions:

  1. Place the sesame oil into a large skillet and heat until very hot, the oil will start to shimmer.
  2. Add the onions carrots and peppers and sauté for 2 to 3 minutes.
  3. Add the salt pork, cook until warms through.
  4. Push the salt pork and vegetables to the side and add the egg stirring quickly.
  5. Once the egg has reached a scrambled consistency, stir in with the vegetable and pork.
  6. Add the salt and pepper, along with the dill.
  7. Add the peas and the hot rice. Stir to combine.
  8. Add cold-water shrimps, lime juice and a quarter cup of soya sauce.
  9. Taste and adjust salt, pepper, and soya sauce to liking.
  10. Top with green onion and serve.
