Smoked Salmon and Apple Salsa Tacos
Serves 4
Ingredients:
- 1 pack J Willy Krauch cold smoked salmon
- 4 flour tortillas
- 2 oz spinach
- 4 tbsp cilantro lemon remoulade (recipe below)
- 4 oz apple salsa (recipe below)
- Sprigs of cilantro
Directions:
- Place spinach on each tortilla.
- Fill with the smoked salmon mixture.
- Top with cilantro mayo, sprig of cilantro and squeeze of lemon.
Smoked Salmon Taco Salsa Mixture:
Makes 4-6
- 2 packs J Willy Krauch smoked salmon, sliced
- 2 tbsp cherry tomatoes, diced
- 2 tbsp cucumbers, diced
- 2 tbsp red onions, diced
- 1 tbsp cilantro
- 1 oz olive oil
- ½ tsp coarse sea salt
- ¼ tsp ground pepper
- Juice of one lime
Directions:
- Mix all ingredients in a medium size bowl.
- Let sit in refrigerator until ready to use.
Cilantro Lime Remoulade Ingredients:
- ½ cup mayonnaise
- Juice of ½ lime
- 2 tbsp red onions, finally diced
- 1 tbsp cilantro
- Salt pepper to taste
Directions:
- Mix well in a med size bowl and refrigerate until needed.
