Healthy Ramen Bowl

Ingredients:

  • 1 63g package of dry ramen
  • 1 cup mushrooms, thinly sliced
  • ½ cup zucchini, chopped
  • ½ cup carrots, thinly sliced
  • ½ cup corn, frozen
  • 1 cup bok choy, chopped
  • ½ cup edamame, frozen
  • 2 cups low sodium broth

Directions:

  1. Pour boiling water over dry ramen noodles, cover for 3 minutes and drain.
  2. To make on-the-go jars, use a 24 oz mason jar. This recipe makes enough for 2 servings this size.
  3. Layer ingredients in the jar: ramen, vegetables (mushrooms, zucchini, carrots, corn and bok choy), and protein – edamame (could use any protein desired – cooked shrimp would be delicious).
  4. Garnish if desired with lemon, hot sauce, kimchi.
  5. Top with boiling broth.
  6. Allow jar to steep for 3 – 5 minutes.
