Coleslaw for the Masses

Serves 40

Ingredients - Dressing:

- 1 ½ cups mayonnaise (not whipped salad dressing)

- ½ cup minced onion

- 3 oz. minced dill pickle

- 2 oz. pickle brine

- 2 oz. white vinegar

- 2 tbsp. prepared horseradish

- 2 tbsp. sugar

- 2 tsp. coarse sea salt or kosher salt

- 1 tsp. celery seed

- 1 tsp. coarsely ground fresh black pepper

Ingredients - Salad:

- 2 heads white cabbage, thinly sliced

- ¼ head red cabbage, thinly sliced

- 1 green pepper, thinly sliced

- 2 large carrots, grated

- 1 cup daikon, grated

- 1 bunch green onions, thinly sliced

Method:

1. Mix together all dressing ingredients.

2. Mix together all salad ingredients.

3. Combine dressing with salad, place in a bowl and serve.
