Ingredients:

  • 1 honeydew melon, cubed
  • 1 cucumber, sliced
  • 2 tbsp. fresh mint, chopped
  • 1/2 cup feta, crumbled
  • 2 tbsp. olive oil
  • 1 tbsp. white wine vinegar
  • Juice and zest of 1 lime
  • 1 tbsp. honey
  • Pepper to taste

Preparation:

  • Combine the cucumber, melon, mint and feta in a bowl
  • Whisk together the olive oil, vinegar, lime juice, zest, honey and pepper
  • Pour over melon and cucumber mixture
  • Chill and serve
