Ingredients:
- 1 honeydew melon, cubed
- 1 cucumber, sliced
- 2 tbsp. fresh mint, chopped
- 1/2 cup feta, crumbled
- 2 tbsp. olive oil
- 1 tbsp. white wine vinegar
- Juice and zest of 1 lime
- 1 tbsp. honey
- Pepper to taste
Preparation:
- Combine the cucumber, melon, mint and feta in a bowl
- Whisk together the olive oil, vinegar, lime juice, zest, honey and pepper
- Pour over melon and cucumber mixture
- Chill and serve
