Cheddar and Sausage Quesadillas

Makes 4

Ingredients:

  • 4 X 10 inch flour tortilla
  • 2 tbsp olive oil
  • 2 cheddar sausages
  • 1 yellow onion, julienned
  • 1 yellow bell pepper, julienned
  • 3 green onion, cut on bias 1 ½ inches
  • 4 oz shredded marble cheddar
  • 2 oz honey mustard

Directions:

  1. In a small frying pan, add 1 tbsp of olive oil.
  2. Cook the sausage until internal temperature reaches 165F and then slice sausage on the bias and set aside.
  3. Use the same frying pan and add 1 tbsp of olive oil to sauté the onions, peppers and green onions for 3 to 4 min.
  4. Add the sausages and cook for few more minutes.
  5. To assemble, lay your flour tortilla on a cutting board.
  6. Add sausage, onions, peppers, green onions on ½ of the tortilla.
  7. Then top with ½ oz of the honey mustard and 1 oz of shredded cheese.
  8. Fold the tortilla and then crisp up in the frying pan until crispy on both sides and the cheese has melted.
  9. Cut in wedges and serve with more honey mustard if desired.
