Cheesy Baked Potato Skins

Makes 8

Ingredients:

  • 4 russet baked potatoes, cut in half
  • 2 tbsp olive oil
  • Sea salt
  • Cheddar cheese (we used Dairy Isle cheddar cheese)
  • Mozzarella cheese (we used Dairy Isle mozzarella cheese)

Directions:

  1. Pre-heat your oven to 350F.
  2. Rub the potatoes in olive oil and place on a baking sheet.
  3. Sprinkle with the sea salt and bake for 1 hour, until golden and crispy.
  4. Remove from oven and bring to room temperature.
  5. Once cooled, remove the inside of the potato using a spoon, leaving ¼ inch from the skin.
  6. Add two inches of oil to a pan and fry the potato skins until golden.
  7. Stuff potato ½ with cheese sauce (recipe below), and top with lots of mozzarella and mild cheddar.
  8. Bake in a 350F oven on a baking pan until cheese is melted.
  9. Top with bacon bits, sour cream and green onions to serve.

Cheese Sauce Ingredients:

  • ¼ cup (50 mL) butter
  • ¼ cup (50 mL) flour
  • 2 cups (500 mL) milk
  • 2 cups (500 g) cheddar cheese
  • Salt and pepper to taste

Directions:

  1. Melt butter in a saucepan.
  2. Whisk in flour and cook until golden.
  3. Add milk and stir until thickened.
  4. Stir in cheese until melted.
  5. Season with salt and pepper to taste.
