What's For Dinner: Blueberry, Chicken and Avocado Grilled Cheese
Serves 4
Ingredients:
- 1/4 cup butter
- 8 bread slices of your choice
- 1 cup wild blueberries (we used Nova Scotia Wild Blueberries)
- 2 tbsp ricotta cheese
- 2 tbsp sour cream
- 2 tbsp Greek yogurt
- Juice of ½ lime
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 cup parmesan cheese
- 1/2 cup mozzarella cheese
- 8 oz grilled chicken
- 1 avocado, sliced
- 8 slices crisp cooked bacon
Directions:
- Use half of the butter to spread on four slices of bread.
- Place these pieces of bread butter side down in a sauté pan.
- Combine the wild blueberries, ricotta, sour cream, Greek yogurt, lime, salt, pepper and 1 tbsp parmesan and mix well.
- Spread ¼ of the sauce on each of the slices of bread.
- Add a layer of mozzarella, top with the bacon, chicken, avocado and the remaining cheese.
- Top with the second slice of bread and spread with the remaining butter.
- Place the sauté pan over a medium high heat and grill until the sandwich is golden brown.
- Turn and repeat on the other side.
Nova Scotia Wild Blueberries are available in the frozen food section of your local grocery store or market.
